Steamed Lapu Lapu or Golden Pompano

Ingredients
- 
                500-700g Black Lapu Lapu or Golden Pompano 
- 
                Fresh Ginger, thinly sliced 
- 
                2 onion leeks, sliced diagonally 
- 1 tsp rock salt 
- 1/2 cup vegetable or olive oil 
- 
                
1/8 cup soy sauce 
- 1/8 cup water 
- 1/4 tbsp sugar 
- leeks and fried garlic for garnish 
Sauce
Directions
- Divide ginger into 2 equal parts and the onion leeks into 3 equal parts 
- Stuff the fish with 1 part of the ginger and 2 parts of the onion leeks 
- Rub salt to fish, inside and out 
- Mix Sauce Ingredients and pour over fish. 
- Top with remaining ginger slices 
- Steam on medium heat for 20 minutes 
- In a separate pan, heat oil for 2-3 minutes. Add remaining onion leeks. 
- Transfer the steamed fish into a serving fish platter (elongated if possible), then slowly pour hot oil mixture over the fish. 
- Garnish with onion leeks and fried garlic.
