Sous Vide Ginger-Scallion Chicken (includes steaming option)

                    Ingredients
- 
                
300g Chicken Breast FIllet (Skinless) 
- 
                6 tbsp scallions/ spring onions (green part only) , chopped 
- 
                2 tbsp ginger, grated 
- 1/2 cup cooking oil 
- 2 tsp sesame oil 
- salt and pepper to taste 
Directions
- Set sous-vide to 146.5F. 
- Season chicken breast with salt and white pepper. 
- Place chicken in a vacuum sealed bag, and sous-vide at 146.5F for 2 hours 
- Prepare GINGER SCALLION SAUCE: - a. Combine chopped scallions and grated ginger in a heat-proof bowl. - b. In a small saucepan, heat oil until it ripples an shimmers. - c. Carefully pour hot oil over ginger-scallion mixture. - d. Season with salt and white pepper, drizzle with sesame oil and mix thoroughly   
- Slice cooked chicken at an angle, arrange on serving plate, and spoon prepared sauce on top. 
- Serve with hot rice 
Recipe Note
Note 1: The chicken can be steamed on high for 20 minutes. Or, steam simultaneously with rice if the rice cooker has a steam tray for a one-pot meal.
