1 kg chicken thighs

1/8 cup calamansi
2 tablespoons garlic salt

2 pc egg
2 cup potato starch
Directions
Rinse the chicken pieces and pat them dry with paper towels. In a large bowl, combine the garlic salt and calamansi juice. Rub the calamansi-garlic salt mixture evenly over the chicken pieces. Let the chicken marinate for at least 30 minutes, or refrigerate for up to 2 hours for more intense flavor.
Place the egg and potato starch in 2 separate bowls.Dredge each piece of chicken into the egg then the potato starch, ensuring each piece is thoroughly coated. Shake off any excess starch.
Carefully place the coated chicken pieces into the hot oil, being sure not to overcrowd the pan. Fry in batches if necessary.Fry the chicken for about 6-8 minutes per side, or until the chicken is golden brown and crispy, and the internal temperature reaches 165°F (74°C).Use a slotted spoon to remove the chicken from the oil and transfer it to a plate lined with paper towels to drain any excess oil.
