Here's a recipe for Garlic Salt Fried Chicken coated with potato starch, using FishnChix.Ph chicken thighs or your favorite chicken parts:
 
                    Ingredients
- 
                1 kg chicken thighs 
- 
                1/8 cup calamansi 
- 2 tablespoons garlic salt 
- 
                2 pc egg 
- 2 cup potato starch 
Directions
- Rinse the chicken pieces and pat them dry with paper towels. In a large bowl, combine the garlic salt and calamansi juice. Rub the calamansi-garlic salt mixture evenly over the chicken pieces. Let the chicken marinate for at least 30 minutes, or refrigerate for up to 2 hours for more intense flavor. 
- Place the egg and potato starch in 2 separate bowls.Dredge each piece of chicken into the egg then the potato starch, ensuring each piece is thoroughly coated. Shake off any excess starch. 
- Carefully place the coated chicken pieces into the hot oil, being sure not to overcrowd the pan.
