Cream of Pumkin Soup

A family favorite that brings the taste of restaurant pumpkin soup to home - and even better!
 
                    Ingredients
- 
                500 grams Pumpkin - peeled, seeded and cubed 
- 3 cups Chicken Stock 
- 
                2 piece Yellow Onion, chopped 
- 1 piece Bay Leaf 
- 
                1/2 teaspoon Thyme, dried or 1 tsp fresh thyme 
- 1/4 teaspoon Nutmeg 
- Fresh Milk OR Heavy Cream 
- Salt and Freshly Ground Pepper 
- Heavy Cream to Garnish and Nutmeg 
Directions
- In a large pot, saute onions in olive oil and mix together pumpkin, chicken stock, bay leaf, thyme , nutmeg and salt and pepper. Bring to a boil over high heat. Cover, reduce to medium heat, and simmer until pmpkin is tender. 15 to 20 minutes. 
- Puree soup with a hand blender or in a food processor in batches. Whisk in milk or cream until desired consistency is achieved. Return to pot and heat to serving temperature. Do not boil.
